Jason started his training as a butcher in 1988, taking up an apprenticeship with an experienced butcher in Chatswood, Sydney NSW.

After spending 2 years there, he moved to the Gold Coast, finished his apprenticeship and worked as a butcher on the Gold Coast for the best part of 30 years. Jason worked with and managed several different retail butcher shops, gaining valuable experience and insights along the way. He also operated a business exporting Aussie meat to Japan, Dubai and South Korea.

Jason and Kelly met on the Gold Coast in 2000, and married in 2004. They then moved to Norfolk Island in 2019 to successfully manage and operate "The Butcher in The Mall". After 4 years running the butcher shop on the island, and with two boys of their own (to add to 3 other children, plus 3 grandchildren) , the time was right to make the move back to the mainland and Nambucca Heads.

Jason and Kelly took ownership of the Nambucca Heads Butchery in September 2023 and have not looked back since. Jason is a skilled and creative butcher and able business owner/operator. Kelly is joint-owner, joint operations manager, social media and marketing manager and they both work the shop counter daily with a smile.  Together they have continued to grow and improve the butcher shop the locals loved, and now have a great little team that includes more experienced staff, apprentices and customer servers.
